Peacemaker Fridays

We’ve been through a lot of debate recently about the best fish fry offering for Lenten Fridays, but Mardi Gras settled that question in the course of a few days. While we always offer a fresh fish special, for Fridays during Lent, we’ll also be offering Peacemakers, aka Oyster Po’ Boys.

A very distinctive aspect of New Orleans po boys is the French bread; it has a light and feathery crumb, with a crisp crust, often attributed to the warm temperatures and humid conditions of the climate, contributing to a very active yeast culture. Our baguettes are made with a poolish starter, a long-fermented base that starts the bread dough with a very active fermentation, ending in maximum volume, a soft and feathery interior, crisp crust, and delicious, yeasty flavor.

The oysters are fried for only about 90 seconds at 360 degrees, to crisp the exterior, while leaving the bellies plump and juicy. Remoulade slaw, our house-made cucumber pickles, and organic grape tomatoes round it out, accompanied by our hand-cut fries. It doesn’t get any more traditional, or delicious,  than that!

Ready, Set…

Months later, after much effort, we are licensed to serve beverage alcohol in the City of Chicago and State of Illinois! For all the horror stories you’ve heard, the process was rather straightforward, if a little complicated, but not without reason. As much time as we’ve put into constructing our cocktail, wine, and beer menus, we recognize the responsibility of serving beverage alcohol to the public, and I’m glad the authorities vet license applicants as thoroughly as they do.

For the record, the Department of Business Affairs and Licensing was a great resource throughout the process. Overall, I’d grade the service the City provides to businesses as on par with most restaurants. We had one moody inspector, who shall go unnamed (and nonetheless did his job well) but every single other City employee I dealt with was courteous and respectful.

We are now bonafide servers of fine drinks, wine, and beer to go with your delicious coastal southern food. So come and unwind with a cocktail, cold beer, or delicious wine with your meal!

Previews – practice

This week has been the week of previews. We are not officially open yet, but we are doing “practice” runs this week Wednesday through Friday. We had a few friends come over, and our publicist brought a lot of people. We have previewed brunch and tea and dinner — it’s gone pretty well but there are certainly a few finishing touches and enhancements to be made. Unfortunately we’re too busy to write about it right now! The food is fantastic!
